Summer Mix
• Mix together some orange stuffed and some lemon stuff olives. (05.04.003 and 05.04.003)
• Toss in extra virgin olive oil (17.00.005). • Add handful chopped garlic. • Add handful of chopped thyme. • Serve.
Tomato and Basil Mix
• Drain the Sun-dried Tomato Stuffed Olives (05.09.003) and rinse. • Toss in some extra virgin olive oil (17.00.005) • Add fresh chopped basil.
Feta and Olive Salad
• 1 cup feta (15..00.001) – cubed • _ Cucumber – diced • _ cup Semi-dried Tomatoes (12.00.009) • _ cup red onion – diced • Sprinkle of salt • Drizzle of extra Virgin Olive Oil (17.00.005) • Cup of jumbo pitted green olives (06.03.003) • Splash of lemon juice. • Spiced Moroccan Chicken with Olives (serves 4 – 6) • 2 tsps paprika • 1 tsp ground ginger • _ tsp cinnamon • 1 tsp tumeric • _ tsp ground pepper • 1 tsp cumin • 2 tbsp extra virgin olive oil (17.00.005) • 3 – 4 lbs chicken (8-10 pieces) • Pinch salt • 3 Cloves garlic • I onion • Lemon• Cup Pitted green olives (06.14.003) • Water • Cup of raisins or sultanas
Place all the spices into a bowl, coat the chicken pieces and leave for about an hour. Heat the oil in the bottom of a tagine. Add the chicken and a little salt and cook for about 5 minutes until brown. Keep on a low heat and add the onions and garlic. Cook for 10-15 mins. Stir and add olives, slices of lemon, rasins and about half a cup of water. Cover and simmer for about half an hour.
Serve with cous cous.
